How to Make a Homemade Custard Base for Ice Cream

In this article, I’ll explain how you can make a simple vanilla custard base that you can use on its own to make a wonderfully creamy vanilla ice cream, or as a base to which you can add different flavors.

There are several ways to make ice cream, one of which is a custard base to which you add your own flavors. This is the method I use for most of my ice creams, it makes a very sweet, very creamy custard base and is very easy to make.

Many people dread making a custard base because they think it’s quite complicated, involving both heating and reheating so that the mixture doesn’t curdle. If you’ve never made a custard base before, you may have to try a few times to get it right, but the great thing is that once you know how to do it right, it’s actually a very simple process.

Below is my tried-and-true method for making an ice cream cream base. Adding the vanilla bean is not absolutely necessary, but personally I think that the vanilla flavor adds to the ice cream. If you don’t want such a creamy base, you can always increase the milk and decrease the cream, ensuring you always have 600ml of liquid.

Ingredients

375 ml cream

225 ml of milk

50 g of brown sugar

4 large egg yolks

1 vanilla pod

Slice the vanilla bean lengthwise and scrape the seeds into the milk-cream mixture. Add half of the sugar and heat the liquid over medium heat until almost boiling. You can tell the liquid has almost reached boiling point by the small bubbles forming around the rim.

Remove from heat and cool for 30 minutes to an hour. This allows the liquid to absorb the vanilla flavor.

While the milk and cream are cooling, mix the egg yolks and the remaining sugar to a creamy consistency. If necessary, add a few tablespoons of the milk and cream mixture.

Heat the milk and cream mixture again until almost boiling. Remove the saucepan from the heat and add the egg yolks and sugar, whisking vigorously, you don’t want a creamy scrambled egg after all that work.

Now place the custard over a very low heat, stirring constantly until the mixture thickens and coats the back of a wooden spoon. It usually takes about 10 minutes. Remove from heat and pour into a bowl

If you have a thick custard mixture, you need to chill it before putting it in the ice cream maker. This can be done by putting the custard in the fridge for a few hours or putting it in a cold water bath. I usually take a load of ice cubes out of the freezer and put them in the sink, fill the sink with cold water and put a bowl of custard, covering it with plastic wrap.

Once cooled, it is ready to pour into the ice cream maker. This way you get a delicious vanilla ice cream on its own or you can add other flavors during the process.
